Research, constancy services and participation in different projects are some of the main activities of the Enology Department. The laboratory at this Department is authorized to control exported wine and spirits and to issue of corresponding documentation for quality certificates.

The Enology Department is in charge of micro-vinification, i.e. wine production in small quantities. The purpose of this procedure is testing of different technologies and vinification methods on introduced varieties and clones, as well as existing varieties from the Institute collection.

The Institute of Agriculture maintains permanent contacts through the consultancy services to the small and large wine cellars in the Republic of Macedonia.

The Enology Department works with three PhD holders, one chemist, a technician and two field inspectors.
